Pineapple Curry with Prawn and Mussels

Ingredients:

Coconut milk – 2 cups
Red curry paste – 2 tbsp
Fish sauce – 2 tbsp
Sugar – 1 tbsp
King prawns (Shelled and deveined) – 250g
Mussels (cleaned and beards removed) – 450g
Fresh pineapple (crushed or finely chopped) – 175g
Kaffir lime leaves – 5
Red chili (chopped) – 2 to garnish
Coriander leaves to garnish

 

Prepare:

1. Take a sauce pan
2. Pour 1 cup coconut milk and boil
3. Add the red curry paste and cook until fragrant
4. Add the fish sauce and sugar continue to cook for 30 sec
5. Stir in the rest of the coconut milk and bring back to boil
6. Simmer
7. Add king prawns, mussels, pineapple and kaffir lime leaves
8. Reheat to boil and then simmer for 5 min (until the prawns are cooked and mussels have opened)
9. Remove any mussels that have not opened and discard
10. Garnish with chopped red chili and coriander leaves
