Stir fried prawns with Tamarind

Ingredients:

Tamarind paste – 50g
Boiling water – 1 cup
Vegetable oil – 2 tbsp
Chopped onion – 2 tbsp
Sugar – 2 tbsp
Chicken stock or water – 2 tbsp
Fish sauce – 1 tbsp
Red chili (fried) – 6
Uncooked shelled prawns – 450g
Garlic (fried and chopped) – 1 tbsp
Shallots (fried and sliced) – 2 tbsp
Spring onion (chopped) – 2 (to garnish)

 

Preparation:

1. Put the tamarind paste in a small bowl
2. Pour over the boiling water
3. Stir well to break up any lumps
4. Leave for 30 min
5. Strain, pushing as much of the juice through is possible
6. Keep only 6 tbsp of the juice (needed for preparation). Store the reminder in the fridge
7. Heat oil in a wok
8. Add chopped onion until golden brown
9. Add sugar, stock, fish sauce, dried chilis and tamarind juice.
10. Stir well until the sugar dissolves
11. Bring to boil
12. Add the prawns, garlic and shallots
13. Stir-fry until the prawns are cooked (approx 4-5 min)
14. Garnish with spring onion
