King Prawn Japanese Salad

Ingredients:

King Prawn (peeled) – 400g
Bean Sprouts – 200g
Mangetout – 125g
Water Chestnuts (thinly sliced) – 100g
Iceberg Lettuce (shredded) – ½
Radishes (thinly sliced) – 12
Sesame seeds – 1 tbsp

 

Dressing:

Rice vinegar – 2 tbsp
Sunflower oil – 125ml
Five spice powder – 1 tsp
Mirin – 2 tbsp

 

Preparation:

1. Set a steamer over a pan of simmering water and steam the king prawns for 2 – 3 min (until pink)
2. Keep aside and leave to cool
3. Make the dressing by mixing all the ingredients
4. Toss together the bean sprouts, magnetout, water chestnuts, lettuce and sesame seeds.
5. Drizzle over the dressing
6. Serve immediately
