Herby Chickpeas Crab Cakes

Ingredients:

Chickpeas (rinsed and drained) – 400g
Spring onion (finely chopped) – 2
Parsley (chopped) – 3 tbsp
Chives (chopped) – 2 tbsp
Egg yolk – 1
Piri piri sauce – 1 tsp
Worcestershire sauce – 1 tsp
Mayonnaise – 2 tbsp
Breadcrumbs – 150g
White crab meat – 300g
Olive oil – 2 tbsp

 

Preparation: 

1. Put the chickpeas, spring onion, herbs, egg yolk, piri piri sauce, Worcestershire sauce, mayonnaise and 50g of breadcrumbs in a food processor and process briefly.
2. Add the crab meat and mix quickly
3. Add more breadcrumbs if the mixture is too wet
4. Transfer the mixture to a bowl and make 4 – 8 patties (as many as you want)
5. Press the pieces into remaining breadcrumbs until well coated
6. Heat the oil in a large frying pan and fry the crab cakes for about 5 min, turning carefully once, until crisp and golden
7. Serve immediately
