Coconut Adobo Prawn

Ingredients:

Coconut milk – 400g
Ginger (finely chopped) – 2 tbsp
Garlic clove (smashed) – 1
Tomatoes (seeds removed and chopped) – 2 medium size
Lime juice – 1 lime
Chipotle chile in adobo (minced) – 1/2
Prawn (shelled) – 450g
Green onions (finely chopped) – 4
Fresh cilantro (chopped) – 2 tbsp
Almonds (toasted and sliced) – 1/2 cup to garnish

 

Preparation:

1. Take a pan and add coconut milk, ginger and garlic
2. Heat to boil
3. Add tomato, lime juice and prawn
4. Reduce heat to medium and cook for 2 – 3 min (until prawns are done)
5. Stir in cilantro and green onions
6. Add almonds (don’t stir)
7. Remove from heat
8. Serve with steamed rice
