Paneer Kofta

Ingredients:

For the Kofta:

1. Paneer – 100 gms (grated).
2. Boiled Potato – 2 (mashed).
3. Khoya – 50 gms.
4. Ginger-Garlic paste – 2 tbsp.
5. Turmeric powder – 1 tspn.
6. Red Chilli Powder – 1 tspn.
7. Handful of fresh coriander.
8. Cumin Seeds – ½ tspn.
9. Coriander Seeds – ½ tspn.
10.Mustard Oil – 2-3 tbsp.
11.Raisins – 25gms.
12.Flour – 50gms.
13.Salt to taste.

For the Gravy:

1. Refined oil – 3 tbsp.
2. Cinnamon – 2 sticks.
3. Green Cardamoms – 6.
4. Brown cardamoms – 2.
5. Cloves – 12.
6. Bay Leaves – 2-3.
7. Cumin Powder – 2 tspn.
8. Onion – 2 Medium (Finely Chopped).
9. Ginger-Garlic paste – 2 tbsp.
10.Turmeric Powder – 1 tspn.
11.Red Chilli Powder – 1 tspn.
12.Coriander seeds – 1 tspn.
13.Tomato puree – 100 gms.
14.Fresh Milk – 100 gms.
15.Curd – 5 tbsp.
16.Sugar – ½ tspn.
17.Salt to taste.

Preparation:

For the Kofta:

1. In a mixing bowl combine the grated paneer, mashed potatoes, khoya, ginger garlic paste, salt, turmeric powder, red chili powder, fresh coriander, grounded cumin and coriander seeds, mustard oil and raisins.
2. Mix well together and knead into a dough.
3. Make koftas (round bite sized balls) of the dough.Dust with flour.
4. Keep in the fridge for fifteen minutes to let the koftas firm up.

For the Gravy:

1. Heat the refined oil in a pan.
2. Add in the cinnamon sticks, green cardamom, brown cardamom, cloves, bay leaves and cumin. Let it crackle.
3. Add the chopped onions, salt, ginger garlic paste, red chili powder and grounded coriander seeds. 4. Cook till the onion turns brown.
5. Add in the tomato puree and fresh milk into the gravy. Stir and let cook on a gentle simmer.
6. Into the pan, add curd and sugar to balance the acidity. Cover and let it cook for 10 – 15 mins.
7. In a different pan, shallow fry the koftas in refined oil.
8. Add the fried kofta into the gravy mixture. Let simmer for 5-6 mins.
9. Garnish the gravy with fresh coriander and a squeeze of lime. Serve hot!
