Paneer-Do-Pyaza

Ingredients:

1. Paneer (cottage cheese) – 500 grams.
2. Onions – 4 medium sized.
3. Refined Oil – 4 tbsp.
4. Cumin seeds – 1 tbsp.
5. Green cardamoms – 5 (crushed).
6. Garlic paste – 1 tbsp.
7. Ginger paste – 1 tbsp.
8. Tomatoes chopped – 2 medium.
9. Tomato puree – ¼ cup.
10.Turmeric powder – ½ tspn.
11.Coriander powder – 2 tspn.
12.Cumin seeds – 1 tspn.
13.Red chilli powder – 1 tspn.
14.Fresh cream – ¼ Cup.
15.Salt to taste.
16.Garam masala powder – 1 tspn.
17.Fried onions – ½ Cup.
18.Ginger – 1 inch piece.
19.Fresh Coriander leaves – ¼ Cup (chopped).

Preparation:

1. Heat a deep non-stick pan and add 2 tbsp oil.
2. Halve 2 onions. Cut further into halves and open out the layers.
3. Heat 2 tbsp oil in another non-stick pan and add these big onion pieces to it.
4. Add cumin seeds, green cardamoms and 2 sliced onions to the oil in the deep pan.
5. Sauté till onions turn golden brown. Cut paneer into 2 inch triangles. Sauté and toss the big onion layers till it turns golden brown and take off the heat.
7. Add garlic paste and ginger paste to onions in the deep pan. Sauté and add 2 tbsp water. Mix well.
8. Add tomato and tomato puree and mix. Add turmeric powder, coriander powder, cumin powder and red chilli powder. Mix well and cook till oil separates.
9. Add paneer triangles and mix well with the masala. Add cream and mix well. Add salt and mix again.
10.Add garam masala powder, the big browned onion pieces and ½ cup fried onions.
11.Add ginger and coriander leaves. Mix everything together lightly.
12.Paneer Do Pyaza is ready to serve.
