Calamari

Ingredients:

1. Vegetable Oil – 3 cups.
2. Flour – ¼ cup.
3. Salt – 1tspn.
4. Oregano (dried) – 1tspn.
5. Ground Black Pepper – ½ tspn.
6. Squid – 12 (Cleaned and Sliced into rings).
7. Lemon – 1 (cut into wedges for garnish).

Preparation

1. Heat oil in a heavy deep frying pan or pot.
2. In a medium size mixing bowl, mix flour, salt, oregano and black pepper. Dredge squid through flour and spice mixture.
3. Place squid in the hot oil for 2 to 3 minutes or until it turns light brown. Beware of overcooking, squid will be tough if overcooked.
4. Dry squid on paper towels. Serve with wedges of lemon.
