Italian Chicken Noodle Soup

Ingredients:

1. Vegetable Oil or Olive Oil – 1 tbsp.
2. Chicken Breasts (boneless and skinless) – 250 gms (cut into 1/2 – inch pieces).
3. Onion – 1 Medium sized (chopped).
4. Chicken Broth – 4 cups.
5. Water – 2 cups.
6. Carrot (sliced) – 3 medium sized.
7. Broccoli Florets – 2 cups.
8. Noodles – 2 cups.
9. Basil leaves (dried) – 1 tspn.
10.Garlic – Pepper blend – ½ tspn.
11.Parmesan Cheese (shredded) – ¼ cup.

Preparation:

1. In a saucepan, heat oil over medium heat. Add chicken. Cook for 4 to 6 minutes, stirring occasionally. Add the chopped onions. Cook again for 2 to 3 minutes, stirring occasionally, until the onion is tender.
2. Stir in chicken broth, water and carrots. Cook for 5 minutes over medium heat until it boils. Stir in broccoli, noodles, basil and garlic-pepper blend. Once it starts boiling, reduce heat.
3. Simmer uncovered for 8 to 10 minutes, stirring occasionally, until vegetables and noodles are tender.
4. Italian Chicken Noodle Soup is ready. Top each serving with cheese.
