Italian Sausage Lasagna

Italian Sausage Lasagna

Ingredients:

1. Pork Sausage – 300 gms.
2. Onion (Chopped) – 1 medium sized.
3. Garlic – 1 clove (Crushed).
4. Fresh Parsley (chopped) – 3 tbsp.
5. Fresh Basil Leaves – 1 tbsp (chopped).
6. Sugar – 1 tspn.
7. Tomato (diced) – 2 cups.
8. Tomato sauce – 5 tbsp.
9. Lasagna Noodles – 400 gms.
10.Ricotta cheese or small-curd cottage cheese – 2 cups.
11.Parmesan cheese (grated) – ¼ cup.
12.Fresh oregano leaves (chopped) – 1 tbsp.
13.Mozzarella Cheese (shredded) – 2 cups.
14.Parmesan cheese (grated) – ¼ cup.

Preparation:

1. In a skillet, cook sausage, onion and garlic over medium heat, stirring occasionally, until sausage is no longer pink. Drain it.
2. Stir in 2 tbsp of the parsley, basil, sugar, tomato and tomato sauce. Heat until it boils, stirring occasionally. Reduce heat to low and simmer uncovered about 45 minutes or until slightly thickened.
3. Cook and drain the noodles as mentioned in the package.
4. In a medium bowl, mix Ricotta cheese, 1/4 cup Parmesan cheese, oregano and the remaining 1 tbsp of Parsley.
5. Spread 1 cup of the sauce mixture in an ungreased glass baking dish. Top with 4 noodles. Spread 1 cup of the cheese mixture over noodles. Spread with 1 cup of the sauce mixture. Sprinkle with 2/3 cup of the mozzarella cheese. Repeat the samewith the noodles, adding remaining cheese mixture, 1 cup of the sauce mixture and 2/3 cup of the mozzarella cheese. Top with remaining noodles and sauce mixture. Sprinkle with remaining mozzarella cheese and 1/4 cup Parmesan cheese.
6. Cover and bake for 30 minutes, uncover. Bake about 15 minutes longer or until hot and bubbly.
7. Wait for 15-20 minutes before cutting.
