Green Curry Chicken with Basil

Ingredients:

1. Coconut Milk – 1 cup.
2. Vegetable or chicken stock – 1/3 cup.
3. Chopped basil leaves – 1/4 cup.
4. Fish Sauce – 1/4 cup.
5. Green Curry Paste – 2 tbsp.
6. Brown sugar – 2 tbsp.
7. Red bell pepper, zucchini, carrots and peas assorted cut-up vegetables – 2 cups.
6. Boneless skinless chicken breasts (medium sized) – 500gms.

Preparation:

1. Mix coconut milk, stock, basil, fish sauce, green curry paste and brown sugar in medium saucepan.
2. Bring to boil on medium-high heat. Reduce heat to low. Simmer 15 minutes.
3. Stir in vegetables and chicken. Simmer 10 minutes longer or until chicken is cooked through.
4. Serve over cooked Jasmine Rice.
