Breakfast Roll

Ingredients:

1. Tortillas – 4.
2. Olive oil – 2 tspn.
3. Onion (chopped) – 2 medium sized.
4. Tomato puree – 10 tspn.
5. Salt to taste.
6. Black pepper powder – 2 tspn.
7. Red chilli sauce – 3 tspn.
8. Silken beancurd (tofu) grated – 1 cup.
9. Green capsicums cut into strips – 2 medium sized.
10.Fresh parsley chopped – 1 tbsp.
11.Grated cheese as required.

Preparation:

1. Heat oil in non stick pan. Add onion and sauté till soft.
2. Add tomato puree, salt, pepper powder and chilli sauce. Mix well and add bean curd.
3. Mix again and add capsicum. Mix well and cook for 2-3 minutes.
4. Add parsley and mix well. Place tortillas on worktop.
5. Put bean curd mixture on one end, sprinkle little cheese on top and roll them.
6. Serve immediately.
