Thai Prawn Green Curry

Ingredients:
1. Sunflower oil – 1 tbsp
2. Shallot (finely chopped) – 1
3. Garlic cloves (finely chopped) – 2
4. Thai green curry paste – 1 1/2 tbsp
5. Coconut milk – 125ml
6. Sugar snap peas (thickly sliced diagonally) – 75g
7. Cooked prawns (peeled) – 85g
8. Soy sauce – 1 tsp
9. Lemon juice – 1 tsp
10.Coriander, chopped, to serve

 

Preparation:

1. Heat the oil in a wok or large saucepan.
2. Add the shallot and garlic, and stir-fry for 1-2 mins.
3. Add the curry paste, coconut cream and 50ml water, and bubble for 2 mins.
4. Add the sugar snap peas and cook for 1-2 mins until just beginning to soften.
5. Add the prawns, soy sauce and lemon juice and heat through.
6. Stir in the coriander 7. Serve with noodles.
