Vegetable Sandwich

Ingredients:

1. Red, green and yellow bell peppers powder – 1/2 tbsp.
2. Onion – 1 (medium sized).
3. Leak – 40 gms.
4. Egg plant – 1 small.
5. Yellow squash – 50 gms.
6. Zucchini – 50 gms.
7. Broccoli, cut into florets – 50 gms.
8. A few lettuce leaves.
9. Salt and pepper to season
10.Olive oil – 3 tbsp.
11.Brie – 3-4 slices.

For the Marinade:

12.Balsamic vinegar – 1 tbsp.
13.Olive oil – 2 tbsp.
14.Salt and pepper to season.
15.Chilli flakes – 1 tspn.
16.Basil leaves – 2.
17.Sage leaf – 1.
18.Rosemary, chopped – 1 small bunch.

For the Spread:

19.Cream cheese – 3 tbsp.
20.Plum chutney – 2 tbsp.
21.Salt and pepper to taste.
22.Few drops of tobasco.

Preparation:

1. Trim the broccoli into florets.
2. Grill the bell peppers, squash, zucchini and eggplant on both sides. Baste with olive oil and
herbs.
3. Marinate the grilled vegetables with the mixture for about 10 minutes.
4. Grill two slices of bread.
5. Make a spread by mixing together cream cheese, plum chutney, a few drops of tobasco and season with salt and pepper.
6. Spread this plum cheese mixture on the slices of bread.
7. Layer a few leaves of lettuce and add the vegetable mix.
8. Add a 2-3 slices of Brie cheese.
9. Serve with chips.
