Mutton Liver and Chops in Mustard Sauce

Ingredients:

1. Mutton Liver – 200 g
2. Mutton Chops – 4 small pieces
3. Curd – 100 g
4. Kasundi – 2 1/2 tsp
5. Turmeric powder – 1 tsp
6. Poppy seed paste – 1 tbsp
7. Mustard oil – 3 tbsp
8. Freshly grated ginger – 1 tbsp
9. Sliced medium sized onion – 2
10. Garlic (chopped) – 1 tsp
11. Chile paste – 1 tsp
12. Bay leaves – 2
13. Dried Red Chili – 2
14. Sugar – 1 tsp
15. Salt – to taste
16. Red chili powder – 1 tsp (if you like your food hot and spicy)

Preparation:

Mutton-Liver-Curry_11. Clean the mutton chops and mutton liver.
2. Marinate mutton chops and liver with curd, 1 1/2 tsp kasundi, 1/2 tsp turmeric powder, 1/2 tsp sugar, salt and 1 tbsp mustard oil.
3. Keep refrigerated for 2 hr.
4. Heat 1 tbsp oil in a pan.
5. Pour the marinated mutton liver and chops.
6. Add 1/2 tsp sugar.
7. Fry in slow flame.
8. When fried remove from heat and keep aside in a bowl.

Mutton-Liver-Curry_39. Heat 1 tbsp mustard oil in the pan.
10. Add bay leaves and dried red chili.
11. Add sliced onion. Sauté until onion turns transparent.
12. Add red chili powder. Sauté.
13. Add chopped garlic and ginger paste. Sauté.
14. Add 1 tsp kasundi. Sauté.
15. Add poppy seed paste. Sauté.
16. Add turmeric powder. Sauté.
17. Add salt. Sauté until the thick paste of all ingredients is ready.
18. Add the mutton chops and liver back into the pan.
19. Mix well and sauté.
Mutton-Liver-Curry_420. Add water and let it to boil.
21. Boil until the mutton chops are done. You may use a pressure cooker here if needed.
22. Take your selfie with the just cooked delicacy.
