Authentic Lebanese Fattoush

Ingredients:

1. Water – 1/2 cup.
2. Cornstarch – 1 tspn.
3. Lemon juice – 1/3 cup.
4. Garlic, minced – 2 cloves.
5. Sumac powder – 2 tspn.
6. Salt to taste.
7. Ground black pepper to taste.
8. Romaine lettuce – torn into bite-size pieces.
9. Cucumber (diced) – 1 medium sized.
10.Tomatoes (diced) – 2 large.
11.Green onion (chopped) – 1 large.
12.Fresh flat-leaf parsley (chopped) – 1/2 cup.
13.Fresh mint (chopped) – 1/4 cup.
14.Green bell pepper, seeded and chopped – 1.
15.Chopped purslane – 1 cup.
16.Arugula – 1/2 packet.
17.Pita rounds, toasted and torn into pieces – 4.

Preparation:

1. Mix the water and cornstarch in a small saucepan over medium-high heat until thickened. Remove from heat, and mix in lemon juice, garlic, sumac, salt, and pepper. Refrigerate until ready to use.
2. In a large bowl, toss together the lettuce, cucumber, tomatoes, green onions, parsley, mint, bell pepper, purslane, and arugula. Toss with the dressing, and serve with pita.
