Potato Mushroom Kebabs

Ingredients:

For the Kebabs:

1. Potato – 1/2 kg.
2. Mushroom – 25gm.
3. Paneer – 25gm.
4. Onion (chopped) – 2 medium sized.
5. Green onion (chopped) – 1 tbsp.
6. Green coriander (chopped) – 1 tbsp.
7. Green chili (chopped) – 2 tbsp.
8. Star Anise – 3pcs.
9. Onion seeds (kalonjee) – 1tspn.
10.Cumin seeds – 2 tspn.
11.Juice of 1 lemon
12.Red chilli (whole) – 8pcs.
13.Turmeric powder – 1 tbsp.
14.Salt as per taste

For Batter:

15.Gram flour (besan) – 250gms.
16.Red chilli powder – 1 tspn.
17.Cumin seeds (crushed) – 1 tspn.
18.Carom seeds (ajwain) – 1/2 tspn.

For the Mango Sauce:

19.Mango pickle – 150gms.
20.Red chilli powder – 2tspn.
21.Salt as per taste
22.Garlic – 2 cloves.
23.Potato (boiled) – 1.
24.Juice of 2 lemons.

Preparation:

For the Kebabs:

1. Boil the potatoes on slow heat until fully boiled.
2. Mash the potatoes and put in rest of the ingredients one by one.
3. Make kebabs of desired shape.
4. For the batter, add 1 cup water in gram flour and mix with red chili powder, salt, cumin and carom seeds.
5. Coat the kebabs with batter and cook on slow heat until they get a lightly golden colour.
6. Serve with achari sauce.

For the Mango Sauce:

7. Add mango pickle, red chilli powder, salt and garlic into warm water.
8. Bring to a boil.
9. Add boiled, mashed potato for thickness.
10.Strain sauce.
11.Add lemon juice and mix. Sauce is ready.
